Beef Rice Bowl

Serves 4-6

1 lb. Concord Farms 100% Grass Fed Ground Beef
3 cups cooked rice (white or brown)
3 tablespoons cornstarch
3 eggs
1 chopped small yellow onion
2 cloves garlic
2 tablespoons shredded ginger root
1 cup chopped broccoli OR green pepper OR tomato
1-2 tablespoons cooking oil (for beef)
3 tablespoons soy sauce
1 tablespoon ground black pepper
1 tablespoon crushed red peppers (optional)
1. Marinate beef with cornstarch and soy sauce, for at least 5 minutes
2. In medium heat, warm up a regular flat pan or a wok
3. Pour oil in when pan is hot, add ginger, onion and garlic. When browned lightly, add the beef
4. Saute the beef until it is cooked
5. Pour beef to a plate, cook and scramble the eggs
6. Pour beef into scramble eggs, add vegetable and stir fry together. Cook until the vegetable head through
7. Add black pepper and red pepper. Stir
8. Pour into hot rice
9. Serve immediately
Optional Instructions If preferred, you may use thin pasta, such as capellini or angel hair instead of the rice noodles. If pasta is used, follow the pasta cooking instruction and cook the pasta thoroughly before mixing it with the beef and vegetables.
