Spicy Quiche

Serves 4-6

1/2 lb. Concord Farms 100% Grass Fed Ground Beef
3 eggs
1 9-inch pie shell
3/4 cup shredded pepper jack cheese
1/2 cup whole milk OR unsweetened almond milk OR unsweetened soymilk
1/2 small yellow onion
1/4 cup chopped broccoli
1-2 tablespoon stir fry oil
1 tablespoon paprika
1 tablespoon ground pepper
1 tablespoon crushed red pepper
1. Preheat the oven to 350F
2. In medium heat, warm up a regular flat pan
3. Pour oil in when pan is hot, add the onion, when browned lightly, add the beef
4. Stir the beef until it is cooked
5. Pour the beef into a layer of paper towel, let the beef cool down
6. Pour beef & broccoli on the pie shell
7. Mix cheese, milk, paprika, ground pepper and red pepper
8. Add the cheese mix to the top of the beef
9. Mix the eggs and pour to the top
10. Bake in 350F for 50 minutes
11. Lower the oven to 300F and bake 10 more minutes OR until the center is dry when checked with a fork
