TASTY Rice Noodles with Beef and Vegetables

Serves 4-6

Ingredients
1 lb. Concord Farms 100% Grass Fed Ground Beef
1 lb. thin rice noodles, uncooked
3 eggs
1 chopped small yellow onion
2 cloves garlic
2 tablespoons shredded ginger root
1 cup chopped green/red/yellow peppers
1/2 cup snow peas
1-2 tablespoons cooking oil (for beef)
1-2 tablespoons cooking oil (for vegetables)
1 tablespoon soy sauce
1 tablespoon ground black pepper
1 tablespoon crushed red peppers
1-3 tablespoons water
1 tablespoon ground turmeric (optional)
Directions
1. Soak the rice noodles in warm water for 5 minutes or until soft
2. In medium heat, warm up a regular flat pan or a wok
3. Pour oil in when pan is hot, add the onion and garlic. When browned lightly, add the beef
4. Saute the beef until it is cooked
5. In another pan, stir all the vegetable with ginger root with cooking oil
6. Pour vegetable mix into the beef
7. Add noodle and water. Cook until the noodles are heated through. Serve at once
8. Add soy sauce, black pepper, red pepper, turmeric and stir
9. Add the eggs on one side of the pan, stir lightly. Mix the scrambled eggs into the noodles
10. Serve immediately
Optional Instructions If preferred, you may use thin pasta, such as capellini or angel hair instead of the rice noodles. If pasta is used, follow the pasta cooking instruction and cook the pasta thoroughly before mixing it with the beef and vegetables.
